I am thinking of getting balanced headphones and/or speakers eventually. How should I do so with Garage1217 amps (specifically the Ember since I am using it)?

You can still use the Ember using a TRS to balanced adapter.

Thank you, does this mean that the signal is still unbalanced but at least in the usual XLR plugs? (I was kinda hoping for hints towards a new Project amp that supports balanced stuff natively lol)

Yes the signal will still be unbalanced but at least there is always a 4-wire connection. The latter is what's important. The only difference between a balanced headphone and not is the fact that 2 return signals are combined in a SE connector.
